Kiwi Muffin Recipe from of 08-05-2020

THE kiwi muffins are the last cakes I made. Every now and then I think of these poor kiwis, mistreated by everyone when they are so good and rich in vitamins. Not only that, but they too can be as versatile as many other types of fruit ... That's why I try to insert recipes from time to time that finally see them as protagonists;) But let's come to us: these kiwi muffins are really delicious, soft, moist and tasty ... and they could help you feed some fruit to those children who just don't love it, so: long live the kiwi muffins!

Method

How to make kiwifruit muffins

First, peel the kiwis and cut them into small pieces.

As always for muffins, combine the dry ingredients (flour, sugar, yeast, salt) in one bowl and the moist ones (egg, milk, oil, vanilla) in another.
Then pour the liquid ingredients, well blended together, over the dry ones and mix quickly.

Finally, also incorporate the kiwis.

Pour the mixture into the molds (if you do not use them in paper or silicone, remember to butter and flour them), filling them 2/3 full.
Then cook for 15-20 minutes at 180 ° C in a preheated convection oven.

The kiwifruit muffins are ready, at least let them cool slightly before eating them, so as not to burn yourself with the hot kiwifruit.

I very much hope that, reading this recipe in some time, the term Covid-19 is just the memory of a distant nightmare and that the life of all of us has returned to normal. The fact is that these days on the one hand lead to reflection, on the other hand to deal with one's passions with even more emphasis. Because creating something, in moments like these, helps to keep your hands, thoughts and heart busy.

For my part, I'm trying to cook simple recipes, with a few ingredients that we all have more or less in the pantry. It is a way like any other to stay close to those who read me, to give ideas that may be of interest and help to experience the table with a smile. These muffins & # 8211 I used the recipe found on the site I live light & # 8211 were born for a direct Instagram, for me it was a bit of a bet that turned out to be a winner! Yes, because these little delights, with their simplicity and the very few ingredients used, turned out to be a real taste surprise! Very fragrant and soft, they have only one flaw: they are truly irresistible! Enjoy ♥

The Beard Pastries!

I love muffins in both savory and sweet versions, as in the case of this recipe.
They are quick and simple sweets in their realization and you are never wrong in offering them.
I love those especially with yogurt and this time I opted for the Skyr I had heard about a while ago in a broadcast and precisely in "Paul Hollywood city bakes".
Intrigued, I used it for this recipe et voilà!
I bring you the wording directly from Wikipedia: Skyr is a dairy product, lean and soft based on sour cow's milk, with a taste and appearance similar to yogurt, typical of Icelandic cuisine.

Ingredients for a 12 muffin pan:
375 grams of flour 00
250 grams of granulated sugar
125 gr of natural Skyr
125 ml of sunflower oil
3 medium eggs at room temperature
1 sachet of baking powder for cakes
1 pinch of fine salt
1 kiwi

Method:
Turn on the oven and adjust it according to the characteristics of your own.
In my case electric at 170 & # 176 with static function.
In a large bowl, pour the eggs and whip them, using the electric whips, with the sugar and a pinch of salt.
Add the Skyr and the oil and start working again, add the flour and baking powder, sieving both.
Obtain a medium-thick mixture in which all the ingredients must be mixed together.
Clean the kiwi and cut 12 slices from it.
Place the paper cups in the muffin pan and pour the mixture into them until 3/4 of their capacity is filled, place a slice of kiwi on each and bake.
In my case it took about 20 minutes for internal cooking and external browning.
When ready, remove the pan from the oven and remove the muffins from the mold by placing them on a wire rack to cool them.
Presenting the muffins today is Barba Passion, one of my beloved Barbapapa from my dense and colorful collection!

Kiwi muffins

Among the seasonal fruit typical of the winter period, we find the kiwi, rich in water, low in fat and without cholesterol but a real bomb of vitamins and mineral salts, which make it a real " super-food ”.

It has a very high content of vitamin C (more than orange, lemon and pepper!) Which, in combination with vitamin E, copper, and iron, gives the fruit antiseptic and anti-anemic characteristics. Kiwi also has a refreshing, thirst-quenching and diuretic action, as well as enhancing the immune system. The high intake of fiber acts positively on intestinal motility by preventing constipation and some alterations of the intestinal microbiota.

Enjoying the muffins for breakfast or as a snack, accompanied by a fresh squeezed orange juice, the fullness of vitamin C is ensured, while the kiwifruit pulp and wholemeal flour guarantee a good coverage of the daily fiber requirement, reducing glycemic peaks and regulating the gastro-intestinal transit as well as the sense of hunger.

So you just have to try them!

/>AuthorDr. Erika Meroni Assessment Difficulty Easy

Clean two ripe kiwis with regular peel, removing the peel and any defects in the pulp and cut them into small pieces.

Blend them together with the sugar and oil, without leaving lumps. If you want you can also use melted butter as a source of fat, I recommend you use the oil (choosing the type of seed you prefer, I chose the sunflower one) to make the muffin less heavy, more digestible and also suitable for those who is lactose intolerant or sensitive to dairy products.

In a bowl, add the wholemeal flour and the sifted yeast, add the kiwi puree and mix everything well until you get a homogeneous mixture.

Using a spoon, place the mixture in special muffin cups, and bake in a pre-heated oven at 180 ° for 15-20 min (check because the cooking times vary from oven to oven, I recommend always doing the toothpick test: must be dry!).
