  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons dried oregano
  • 1/4 teaspoon cayenne pepper
  • 1.5kg boneless pork shoulder
  • 1L beef stock
  • 2 bay leaves
  • 1/2 large onion, cut into large chunks

  1. Combine the garlic powder, cumin, coriander, oregano and cayenne pepper in a bowl. Thoroughly rub the spice mixture over the pork.
  2. Place the roast in a pressure cooker with the beef stock, bay leaves and onion over medium-high heat. Seal the cooker and bring to full pressure; reduce the heat to maintain high pressure, and cook for 45 minutes.
  3. Remove the pressure cooker from the heat and allow the pressure to drop naturally. Transfer the pork to a serving bowl and shred the meat with forks.

They're both topped with a delicious, fresh Easy Mango Salsa, avocado, crumbled cotija, and cilantro. Fabuloso!

I typically use a small pork loin (4-5 pounds), and we enjoy several meals. The Mexican Pulled Pork freezes beautifully. It's so satisfying to thaw a zip bag of this amazingly flavorful and tender pork, and have a meal on the table in minutes. Try it with Mexican Cilantro Rice. A simple green salad with Cilantro Jalapeño Ranch Dressing completes the meal.

My Work Flow:

I always brown my meat first. The maillard reaction is an important step in achieving the most flavorful results! I brown the pork loin (takes about 5-10 minutes) with the onion and garlic. I add the remaining ingredients, and pressurize 60 minutes. After a slow-release, the pork is ready to shred and enjoy!

Instant Pot Pork Carnitas Tacos

Hi friends, this is Jennifer from JENRON DESIGNS. I am a weekly guest here on Home Pressure Cooking. Today I am sharing another one of our Taco Tuesday favs, Instant Pot Pork Carnitas Tacos.

Instant Pot Pork Carnitas Tacos make a great weeknight dinner and are perfect for your Taco Tuesday! Try a few of my other outstanding Taco Tuesday creations with these must try recipes like my Thai Lettuce Wraps, and Aloha Chicken Tacos. Instant Pot Pork Carnitas Tacos combine fresh ingredients for simple flavors that are straight from south of the border.

Start by adding 2 tbsp of olive oil your Instant Pot on the sauté setting. Add in chopped onions, sauté for 3-5 minutes. Next add in your ground pork, seasoned with taco seasoning and lime zest. Saute using spurtles until browned, around 5-6 minutes.

Add 1/2 of the diced tomatoes, poblanos peppers, tomato paste, and 1/2 cup of chicken stock. Seal Instant Pot lid and cook for 10 minutes at High Pressure Cook, allow to natural vent for approximately 10 minutes before you serve.

Make a quick Roasted Corn Salsa : while filling is cooking, drain corn, lightly roast in your air fryer for 5 minutes at 390 degrees (or in skillet). Place roasted corn into a bowl add remaining diced tomato, cilantro, lime juice 1 tbsp of reserved, onion minced, stir to combine. Season with salt and pepper.

When filling is completely done cooking, and has vented naturally for 10 minutes. Serve using a slotted spurtle to drain off excess juice, divide filling into tortilla shells. Top with cheese, sour cream, corn salsa, and enjoy!

Ingredients

  • 4 pounds (1.9kg) boneless pork shoulder, cut into 2-inch chunks
  • 3/4 pound tomatillos (about 4 tomatillos 350g), quartered, husks discarded
  • 2/3 pound Poblano peppers (about 2 peppers 300g), roughly chopped, seeds and stems discarded (see note)
  • 6 ounces Anaheim or Cubanelle peppers (about 2 peppers 170g), roughly chopped, seeds and stems discarded (see note)
  • 2 serrano or jalapeño chilies, roughly chopped, stems discarded (see note)
  • 8 ounces white onion (about 1 medium 225g), roughly chopped
  • 6 medium cloves garlic, peeled
  • 1 tablespoon (15g) whole cumin seed, toasted and ground
  • Kosher salt
  • 1/2 cup loosely packed fresh cilantro leaves and fine stems (about 1/2 ounce 15g), plus more for garnish
  • 1 tablespoon (15ml) Asian fish sauce, such as Red Boat
  • Fresh corn tortillas and lime wedges, for serving

Make tacos! After you're done pulling the pork into shreds, run it under the broiler to give them that signature carnitas crispiness. Then toss with the reduced cooking liquid and serve with all your favorite taco toppings.

I'd recommend all or some of the following:

  • Sliced avocado
  • Sliced radishes
  • Thinly sliced red or green cabbage
  • Thinly sliced romaine lettuce
  • Diced red onions
  • Chopped tomatoes
  • Crumbled cotija cheese
  • Chopped cilantro
  • Lime wedges

Also, I recommend toasting your tortillas to give them a little char. You can do their either over the open flame of a gas stove (use heat-proof tongs!) or in a dry skillet.

I use a small food chopper or processor to quickly and easily chop onions and green peppers. If you do not have one of these, I highly recommend them. They are such a time saver.

I usually just chop the entire vegetable and freeze what I don’t need. It’s so nice to be able to just take diced onion or bell peppers out of the freezer for recipes.

How to Use a Pressure Cooker to Tenderize Tough Meat

At first, of course, to follow this recipe must have a pressure cooker. If you do not have one yet, or you are looking for one, you should take a look a this best pressure cookers. This site is from a pressure cooking expert, they have all the reviews you need before making your choice.

They are also fantastic ways of tenderizing those cheap, tough cuts of meat. If you can lay your hands on Grandma’s old pressure cooker, here’s how to put it to good use and save money.

Tender shredded pork or beef for tacos, barbecued beef burgers, or lasagna. Instead of buying expensive extra lean hamburger or ground pork, pick up a cheap chuck or pork roast or even those “day old sirloin steaks” in the discounted meat bin. These low fat cuts of meat can be tenderized in the pressure cooker in under 20 minutes.

Instructions:
1 pound of roast or steak partially frozen
1 tablespoon oil
1/2 onion, chopped
1/4 cup of water

  1. Trim fat, slice the roast or steak into thin 1/4 wide strips,
    2. Heat up oil in the pressure cooker (lid off). Add meat slices and onions, stir until lightly browned, about 2-3 minutes.
    3. Add water and seasonings to meat.
    4. Cover with lid, locking it into place. Place indicator weight on the vent pipe, set to 15 and turn burner to high.
    4. When the weight starts to release steam, turn down temperature until indicator “rocks” only 2-3 times a minute (or, in the case of a Presto cooker, maintains 15 PSI). Set the timer to 10 minutes.
    5. After 10 minutes, remove pressure cooker from burner and let cool down on its own, about 5 minutes.
    6. Remove lid.

Seasoning ideas:
For Tex Mex meat filling, a package of chili mix, taco mix, or burrito mix can be added with the water.
Add a teaspoon of oregano, pinch of salt, and half teaspoon of basil with the water for Italian based meat dishes.
Prefer barbecued beef or pork sandwiches instead? Adding 3/4 cup of your favorite barbecue sauce along with the water makes enough meat filling for six delicious sandwiches.

Mock steak or pork chops and potatoes. Steak and pork chops haven’t been in our budget for years. Fortunately for us old-timey creative cooks, there is a way to make up mock steaks and chops out of tough, cheap roasts. For this shortcut method, you’ll need Grandma’s old pressure cooker, a cheap roast (partially frozen), one pound of pared, halved potatoes, and four pared carrots.

  1. Slice the partially frozen roast into one-inch thick slabs. (Four is all that will fit in a standard 4 quart pressure cooker you can freeze the rest for future meals)
    2. Heat up a smidgeon of oil in the pressure cooker. Lightly brown the slabs on both sides.
    3. Add 1/2 cup of water to the meat. Top with potato halves and carrots.
    4. Adjust lid and lock, place indicator weight on vent pipe and set to 15.
    5. Turn heat to high. When the steam begins to whistle beneath the indicator weight of the pressure cooker, turn heat down until weight “rocks” only 2-3 times per minute.
    6. Cook for 12 minutes, remove from heat and then cool immediately by running cold water over the lid. Once the pressure has cooled, the lid can be removed and then dinner will be ready to serve.
