Put water and sugar in a saucepan. Put on the fire and stir until the sugar melts. Take it down and let it cool. Add the oil, eggs, grated lemon peel, salt and start adding flour. After we put 300 gr of flour, we put the baking powder and the baking soda quenched with a teaspoon of lemon juice. We continue to put the flour until we obtain a non-sticky dough that spreads easily.

Divide the dough into 4 equal parts. Spread each sheet on baking paper, prick it with a fork from place to place and bake it on the bottom of a tray. Bake all the sheets in turn until they start to brown slightly.

For the cream, put the milk and sugar in a saucepan. Put the flour in a bowl and add 1 tablespoon of cold milk (from the 600 ml) until smooth. Mix well so that they are not lumpy and pour over the rest of the milk.

Put the pot on low heat and cook, stirring constantly, until it thickens. Lower and add 50 g of butter and mix vigorously until incorporated. Let it cool, then add the lemon juice and peel.

Mix the rest of the butter, then add a little cream in it until you incorporate all the cream. Assemble the cake alternating the sheets with the cream. Sprinkle coconut flakes over the last row of cream. Let the cake cool until the next day.
