  1. Preheat the oven to 140 C / Gas 1. Line a baking tray with baking parchment.
  2. Place chocolate eggs into a resealable food bag; seal the bag. Bash chocolate eggs with a rolling pin or pan a few times. You don't want them pulverized, just cracked into small-to-medium-sized pieces.
  3. Combine flour, cornflour, sugar and salt in a large bowl. Add butter. Beat using an electric mixer until you get a workable dough. Add the crushed chocolate eggs and mix until well combined.
  4. Roll dough into ping pong-sized balls. Flatten balls slightly and lay on the prepared baking tray.
  5. Bake in the preheated oven until the very edges of the biscuits start to brown, about 22 minutes.

Tip:

Add another tablespoon of softened butter if dough is too dry at the end of Step 3.

This is my all-time favourite easy fruit shortbread cookies recipe. They're buttery with a delicious bite and is a great recipe for baking with children. And I'll show you how to turn them into chocolate chip shortbread cookies or dried fruit, etc.

I don't know about you, but while we're isolating, I'm trying to be more resourceful and use up the ingredients we have. This may mean reaching into old bags of dried fruit for Christmas cakes.

In fact, these could easily be called shortbread Christmas cookies. Perhaps with an additional ½ tsp of ground mixed spice. But one thing's for sure, I personally think this is the best shortbread recipe.

And I'll talk you through why I think so. And how to make shortbread cookies with your own adaptations. Just like I have here with what are now delicious currant cookies with mixed peel (candied orange and lemon peel).


  • LEMON CURD: Lemon curd is available in most supermarkets. Look in the jelly aisle. It&rsquos super easy to make lemon curd in the microwave.
  • CRÈME FRAîCHE: In case you&rsquore wondering, crème fraîche originated in France. They traditionally make it with unpasteurized heavy cream. The cream is naturally inoculated with the right bacteria to make it thick.

Because our cream is pasteurized or ultra-pasteurized, we have to add bacteria back to the cream. This process makes a thick and slightly tangy cream.

Crème fraîche is not always easy to find, but it&rsquos always easy to make crème fraîche yourself. You only need heavy whipping cream and some plain, unflavored yogurt (Greek or regular). It takes about 8-16 hours for it to set.

Of course, you can use store-bought tart shells. But they will never be as fresh or tasty as the ones you make in your own kitchen.

  • RASPBERRIES: Raspberries are my favorite fruit with lemon. Blueberries would be good, too. Even sliced strawberries have promise. I have a fresh mint plant outside my back door that provides extra color.

You can make the shells and freeze them unbaked 2-3 months ahead of time. Bake them up to 3 days ahead of time. Stir the filling together and store it in the fridge for a week. Once you add the filling to the tart, it&rsquos best to serve them the same day. The crust will begin to soften after 24 hours. This doesn&rsquot deter me from eating them the next day, but I wouldn&rsquot serve them to guests.

On the day you plan to serve the tarts, make the glaze and let it cool for about 30 minutes. Wash and slice the strawberries and fold them gently into the glaze. Refrigerate for about 3 hours. Do not wash and slice the strawberries much before you are ready to add them to your prepared glaze.

Serve your tarts within a few hours of assembly. Otherwise, the crust will soften, and the strawberries will exude liquid, making the filling slightly runny. They do not hold up well overnight. I don&rsquot mind eating leftover tarts the next day, but I wouldn&rsquot plan to serve them to guests.

  • 4 tbsp raspberry jam

Preheat the oven to 170C/325F/Gas 3.

For a beginner baker, I found this recipe to be relatively simple. I made some slight modiications by pushing a small dent in the top of the cookie and adding a smidge of raspberry jam and a couple of almond slivers. These were a hit with family and friends. Thanks

Lighter and mealier than shortbread, but still delicious. A great way to have a cookie party though! I made two batches of dough and let guests dip and mix their own cookies. If you undercook them as drop cookies a bit they have a chewy cookie consistency. If you overcook them as cut moons from frozen dough they have a denser shortbread flavor. A good all-around cookie that is super easy to whip up. Iɽ suggest making several batches of dough and freezing it for different holiday parties throughout the season!

These cookies turned out lighter than I expected for a shortbread cookie, but my family and I sure loved them! I used regular salt and left out the vanilla bean simply because I didn't have one. This is one cookie I can truly say is more than the sum of it's parts. Oh, the recipe didn't specify oven temp or bake time, but 385 for 11 minutes worked for me.

I was not very impressed with these cookies. I was worried by the recipe, but the great reviews convinced me to try it. Sure enough, turned out as quite a good sugar cookie, but not very shortbread like. Perhaps I should have burned them more the overcooked ones definitely had better texture.

hello again! well, i made another variation, and it was fantastic! before adding the flour (3 1/2 C), i added 1 1/2 C or so of crystallized ginger. i processed it with 1/4 C of the flour, shook it down from the sides, added another 1/4 C flour, and processed again until there were small bits (minced- sized). i added this mixture to the wet batter, and folded, followed by the remaining 3 C of flour. i sent about 7 dozen cookies to a family reunion yesterday (1/2 5 spice, 1/2 ginger), and everyone raved. i highly reccomend this variation-- i've already thought of two varying subsets to the ginger. will try next time.

my cupboard was a litle bare, but i was dyin' to bake, so i made a couple of changes: one stick of 50/50 butter/Smart Balance, and one cup of Smart Balance instead of all butter 50/50 Splenda/sugar crushed Himalayan pink salt instead of Kosher and only the 2t vanille, no bean scrapings (no beans to be had in the cupboard). even with the changes this is a nummy cookie dough! so far, i have only baked them with 5 spice, but the double chocolate ginger is intriguing.

Cream is not an ingredient in this recipe as some other reviewers noted. I believe the word "cream" means to cream (or beat) the butter, sugar, and salt until almost smooth. Although, I think the addition of cream would make this cookie even richer and more decadent!

Shortbread Cookie Sandwich With Dulce De Leche

These insanely addictive morsels are based on a South American treat called Alfajores which are shortbread cookies spread with Dulce De Leche (caramel) and sandwiched together. The shortbread used in Alfajores is not difficult but …..well, honestly? When I started to prepare to make the biscuits, I simply couldn’t muster the energy to do the full blown “real deal” shortbread for the Alfajores which required pulling out my Kitchen Aid, 20 minutes prep rather than 10 minutes, and 6 more ingredients. It had been a long day! I made these biscuits at 9.30pm at night so I could photograph them in the morning!

So after about 3 seconds of indecisiveness, I decided to make my “go to” shortbread instead. And truly, these are so delicious that I am not entirely convinced I will ever make Alfajores again…..

This is the recipe I have used for shortbread since I can remember. Probably since I left home at the tender age of 18 and had to fend for myself (I’m not going to tell you how long ago that was!). It does not require a mixer and it literally takes 3 minutes to mix up. The dough is soft and easy to handle, not so sticky that it’s difficult to roll out and to place the cut rounds onto the baking tray.

And the thing that always gets me is how smooth the silky the surface is when it comes out of the oven! They definitely look like they took more than 10 minutes of work. Now that’s my kind of baking!

These cookie sandwiches are filled with Dulce De Leche made in a slow cooker which requires only 1 ingredient and takes 15 seconds to prepare. All you do is place sealed cans (without even removing the label) into a slow cooker, cover with water and then set and forget. When you open the can, you will be greeted with insanely rich, thick caramel which is perfectly smooth (no stirring required!). It’s a miracle.
